I didnt know where exactly to put this theory, so I just put it in general discussion. if anyone thinks it belongs somewhere else, tell me.
before you post a response to something, please read the linked thread to see if it was already adressed.
BEGINNING PASTE:

we all know what knights are. no wait, we dont.
some have said robots. some have said not robots. some have said crazy things.
but now I present you... an even crazier theory.

for the first clue, we must look at the shape of knights.
a good way to see this is to look at something like the double ploom helmet (simple skin for those that use spiralspy) and the swimming trunks.
most armors fit these outlines. but wait, what about the plate armor?
you might have noticed it gives you peglegs. so either the knight legs are really thin, or something is off.
looking at the swimming trunks again, it appears as if there is only a thin layer of fabric on them.
one more armor to look at is the gremlin suit. it has a completely different leg structure compared all other armors. if knights had bones, fitting into that suit would break them.
so the only "reasonable" conclusion is that knights are squishy. not meatlike squishy, but rather pudding squishy. so no robots.

the second clue comes from our energy usage.
back when elevators werent free, you simply powered them by walking over them.
you can also use energy gates (or rather all energy-powered devices) by simply tapping them.
this suggest that knights are somehow powered or have energy running through them.
another thing that supports this is spark reviving. it makes a huge electrical surge and you are fine again.
so knights run on energy? wait, I thought no robots.

addendum to the second point.
shock status hurts, but we are powered. how?
try plugging a 12 volt device into a 240 volt socket.
this might not be exactly how it works, but I presume that knights can only work with a specific electrical charge and take damage on all others.

the third clue is something subtle.
small spoilers ahead. beware.
if you complete a ghosts in the machine mission, you get to see what is told to you to be an ancient space crew (or something along those lines). if you look at them, they seem to be wearing silver visors.
we know all things evolve, so would it be farfetched to say we evolved after those "knights" died?
kinda. but not farfetched enough to be dismissed.

now, to assemble my hypothesis.
knights are gelatinous creatures who use electricity (static and flowing) in their bodies, who evolved from "knights" that had silver faces.
we are quicksilvers.
or rather, we were quicksilvers.
you could say quicksilvers are to knights what monkeys are to humans.

some points to adress.
"the silver visors are just on the helmets"
but how do we see? all other helmets have eyeholes. I propose that this silverness is just our... innards.
"but our skin is black"
says who? we could very well be wearing a permanent "skin"-tight suit. if we were quicksilvers, we may even need something like that to prevent loss of shape or dehydration.

this was just a hypothesis for fun. its probably wrong.
but feel free to debate me on it nonetheless.

It does sound a little Farfetch'd to think the knights are Quicksilvers, but it does seem to fit.

I've always thought the knights had to be biomechanical, and the recent Mecha promo has really cemented that. Look at the Mecha Suits, for example; they replace the knights' bodies with very skeletal mechanical frames, and one of their hands with a wrench. This seems like it would be an irreversible procedure, but the knights can easily go back to having a 'normal' body sans wrench hand. Combine this with the knights' abilities to change their height and skin color at will, and it seems pretty clear they are made from interchangeable and replaceable parts.

They can't be constructs though, because there's plenty of evidence that they are biological. Using the /sleep command or standing still for too long will cause a knight to fall asleep, however it is noteworthy that constructs can't sleep. The description text for the Rock Jelly Shield implies that knights need calories from food* (something unique to biological entities) and the description for the Brute Jelly Shield shows they can perceive taste.

*And yet they also need electricity, as shown that they still use an electrical source to revive themselves or others after falling.

My theory then is that the knights are at their heart biological (figuratively and literally) but their bodies themselves are a mechanical shell containing them. For any Doctor Who fans, this may remind you of the physical composition of a certain race that is hellbent on destruction and domination.

@Rare

yes, being partially mechanical makes sense.
though I dont think the "shell" is the mechanical part. I think its more that the knights contain a "skeleton" that can be reconfigured as needed (so that for example the gremlin suit fits) and their outer layer is more of a skin to keep their soft parts in shape.

@Spark-Of-Hope

TV and Movies have the function of defibrillators very wrong. It is designed to reset a fibrillating heart's rhythm back to normal (hence the name de-fibrillator, stops fibrillation). If you'll read the linked wikipedia page, pay special attention to the line:

"Similarly, medical providers are often depicted defibrillating patients with a 'flat-line' EKG rhythm... this is not done in real life as the heart is not restarted by the defibrillator itself."

So no, we don't use defibrillators to revive anyone.

another difference between a

another difference between a defibrillator an a spark is that when you use a defibrillator, you dont cause someone to get struck by lightning and emit a shockwave powerful to stun all surrounding monsters.

also, sparks might not actually be used to revive, but rather just bring someone back to consciousness. death is implied when you... "die", but the only thing known for sure is that one is simply unable to keep moving after "death" occurs.
and yes, knights can die permanently for real. well, "real", we are still talking about a videogame.
so it is very well possible that sparks cant actually truly revive you.

Hm....

I'm guessing Knights die only when their core parts are irreversibly damaged, like how the crystal protrusions in Arkus would be connected to his spin, and thus his nervous systems. So you can "disable" a Knight by defeating them and otherwise killing them conventionally, but in order to truly kill a Knight, you'd have to rip 'em to shreds or something.

For the most part, I think Rare is right in the sense that Knights are mostly mechanical (hence why Gremlins called the Knights "metal people") and have the ability to change parts as needed / wanted, though I think the sensory organs and some internal organs are left over to perform bodily function.

That, or it could be that they just wear a skinsuit and have a mostly organic body (I assume there has to be wetware or some Pip-boy esque device because of the animation set used when opening up menus / dossiers), and the devs just wanted to trick you guys into thinking too hard on little things.
