I know you don't get to choose gender officially but, for those that simply assumed their knight had a gender; what gender have you chosen?
My main knight is male and my second knight is a feminine hermaphrodite(for reasons).
EDIT: I figured adding your knights' 'victory pose' would describe it much better.
I keep people in the dark by dressing in obscure sets (jelly lines) or just switching between floors.
Some times I don't switch for a while and when I do people freak out.

Well... we could say that I'm a girl knight, but I like male-ish things like Dread Skelly Suit + Divine Veil. Buuuuut I still get reactions like Holy-Nightmare's. "OMG VAZKAR IS A GIRL?! SORRY SORRY SORRY".
Plus I like to dress as a girl-ish person in Haven to make fun of people that think they can get a gf on an mmo acting like drooling perverted monsters, lol. I did this in a regular basis in the past with my boyfriend, having him to look behind me or dress in a raiment + tailed helm himself, because, well... the costume is cheap! Lots of laughs.
Annnd there's Tristepin-Percebal + Yuuma-Kuga, both "male".
My knight, AKA, Midnight, is the most feminine male knight of all time, he is kinda like the Hidyeoshi of spiral knight. So the impression is the opposite of Holy-Nightmare's, people ask if I am a girl and then I tell them that I am a boy, hehehehe, the bait has been set...
I generally consider my knight genderless. My main knight at least. I think my alts are all male.

I always saw my main knight as male (Valkyrie Helm with Skolver coat, variable shield typically as BTS) but when I actually asked my guildies... apparently it had become thought that I myself was female due to the Valkyrie helm. /shrug oh well. Made for an interesting conversation.
