I think it would look awesome to have knights riding on a saddled Quicksilver. Just add lightning and you'll be the fastest thing alive. Add blue and the effect will be enhanced. :3

Anyway, answering the question seriously for a change, I'd have to say the only good choice is an Alpha Wolver, as mentioned above. Their normal walk speed is as good as ours, their "charge" speed is amazing, they're big enough to fit a knight on top, and they look intimidating, all necessary qualities in a war mount. Given I still run FSC as often as possible, I'd probably take the T3 Alpha Ash Tail, sacrificing a little health for fire protection. With such a mount I could strafe those Slag Walkers and Lord Vanaduke without any problem, especially if the Wolver is smart enough not to step in Shadow Fire.
Given I always wear Skolver as a costume, the effect would be greatly enhanced. Furry whirlwind of doom, or something.
The one problem I can think of is the Wolver tendency to burrow. This could be overcome with the correct training, though where you would get a trained Wolver is currently not apparent. In any case it's probably a good idea to let your Wolver burrow underground at night, letting it sleep in its prefered environment. Make sure to remove any saddle and harness first.

I would like to ride lug's mountable, flame spewing, explosive diarrhea-ing, spinning, ice cream making, rainbow colored, nine legged, three horned, singing, shovel using, bomb kicking, fat bellied, reptilian, aerodynamic, and fashionably mustachio mammalian abominations to ride out of hell into outer space to reap the sinners of the universe while simultaneously collecting wallets from their dead corpses to fund a church for the god of BLT sandwiches. it sounds about right.
