After about 3 hours I'm seeing that tagging my text also affects anything trailing it. Am I doing anything wrong?

Yes.
Use the tag a second time to stop, but with a slash put in. For example:
< em > text < / em >
Go to "Forum Preferences" at the top (right here: http://i.imgur.com/WAtk5mw.png), then go to "Edit" and pick a picture.
