Why up high and why down ultra =)

There's not a UV on it
There's not a UV on it monkeyman.
The side bars show your individual weapons stats
The bottom shows what it is with the bonuses from the rest of your equips.
So because the ash tail pieces each have a +sword dmg low that stacks +med on to all your swords
You have +med dmg on your faust &
The WHB has +med dmg against everything other than beasts and then adds the +med to the +high vs beast making it ultra.
The bottom one shows the totals of your stat increases for your set so you are doing +ultra against beasts with that loadout.

It goes from High to Ultra
It goes from High to Ultra because of your Ash Tail set, which gives a Medium-level damage boost to your sword. That's why in the 2nd pic you not only see "Damage Bonus vs Beast: Ultra", but also "Damage Bonus: Medium".
