I was so excited when I bought my Defender/Cobalt Armour Set/Calibur that I could do Tier 2, but upon doing so I could barely get passed Depth 13. I'm not sure on what 3-star gear I should upgrade to. Any suggestions for a Swordsman currently with the Cobalt set on Tier 2?

In the end, it's not a good idea to stick with the Cobalt line, as the monsters who primarily use pierce is more of "get out of the attack range" than tank the damage.
Because you say that you are a swordsman, go for the wolver armor-it still offers piercing defense and has the added bonuses of attack and freeze resistance. Also, get a Bristling buckler-same advice as above. It is a boss token, but it's a tier on boss, so it shouldn't be too bad.
