Do I have to start from depth 0 and play to Moorcraft to gain a star for tier 2?
Or I just have to join a party from tier 1 down (like starting at depth 3)

To get the star you can even join a friend at D7, complete the level and get to Moorcroft.

Yep
You can join your friend waiting at the down elevator of D7 and still get the "progress star" for T2. Good way to save 200 CR for future trips to that gate's T2.
Joining a party works. :)
The only reason to start from the start is achievements.
(On a related note for other readers, they fixed Dauntless Delver - you can now get it & Cradle on the same trip)
