I'm not rich and don't know any rich knights, but I heard a rumor about one who was...
He gave away much of his riches in events and contests, helped guildmates get items, and then spent over 10 million crowns on accessories. He's poor now and I see him begging on the streets of Haven sometimes.
All said, it sounds like the answer would be an "All of the above" to your question. : )

Sell all your CE at incredibly low prices and see if you can single-handedly bring the CE market down :D
I give mine away.
But I'm not "rich" anymore, due to that.
I'm not rich, probably never will be, but your shinies are always appreciated if you buy my wares. :B
I play a run every day.
I sell CE at 6000 cr per 100 energy.
I use the rest on crafting and buying recipes.
Honestly i'm not that rich of a knight. Though, I do know a guy who's filthy rich. He's one of my friends(or i'm one of his)
These days I'm playing the market. I have enough crowns and CE to wait and see if prices come down, and when/if they do, I'm going to pounce and take advantage of it.

waste money on lockboxes even tho they are absolutey horrible return on investment. (unless there is some underground blackmarket thats paying incredibly well for fancy maid headbands and barrel bellies that i do not know about yet).
Triple roll for UVs.

Play clockworks while wondering "why am i doing this? this isn't even fun anymore."
its to the point that i'm bored of the game, and i'd simply wash my hands of it and walk away, but i feel like i have too much time invested into it to do that. so instead, i turn it on, run around, chat with a few frineds, open a couple lockboxes, play a run here and there (then realize i'm bored and there is nothing to do. open a few more lockboxes, wish i hadn't wasted all my ce on lockboxes. stew in dissappointment over no new content, and 10 more headbands, then turn it off again.
all that aside. i guess next up, i'll start working on making an alt gunner and bomber. but it makes me wonder why i work so hard at finding something new to do instead of just finding SOMETHING NEW TO DO (like skyrim, or some other new game.) i'm about a month away from just giving up on spiral knights. i'll give it to the new year, to see if they kick it off with a bang and give us NEW STUFF TO DO T_T
then i turn it back on again, muster up the requisite non-lethargy to run vana. wait till i get enough coins for a FOV, triple roll it, and add it to my collection of triple low uv'd Fov's in my inventory. i should really inventory all that worthless junk.
this is my passive-aggresssive attempts to rage against our lack of new content. i'm sooooooooooo bored, and have been waiting for new content for 6mo. jelly and vana were already out before i started playing :/ and the closest thing we got to new T2-T3 bosses is the shadow liars.
You can probably put some of items that aren't bound to you yet or you don't need in the Auction House, and you CAN buy like vitasuits and all those other 150 crowns items in the bazaar, most new players in Spiral Knights will head to the auction house and look for great deals on like vitasuits, cyclops cap, and such. All together by doing that, i have gathered...about 10,000 crowns doing this, i have started doing this about 1 or 2 days ago, i hope this helps :)
I accumulate it and let it collect dust on my account. If I don't need to buy anything, why spend it? Save it up for the next patch, until I see something I want, or until we get Tier 4/The Core (we WILL get this eventually) and 6* equipment).
