Will the spur and pulsar be good (effective) weapons i can use throughout the whole game? (neglecting the lack of a 5* spur weapon)?
I know that the Calibur and Blaster are the best for this, but for whatever reason I dislike using them.

With patience and training, any weapon can work, but you said it first, it's not the best choice.

Any weapon can be eligable for murdering monsters. Spur lack 5* line, and does normal damage what many people dislike, since, "it does not do critical damage". But with practice and endurance, I'm sure it can be eligable.
Pulsar is a weapon with the possible best crowd control. Supernova is better for anything except for monsters which are vurnable to elemental. Polaris does elemental damage and can inflict shock. For endgame reasons, I recommend polaris.

Avoid the Spur.

At 4*, each swing will fire a bullet, meaning dodging enemies will constantly dodge your attacks (it triggers their dodge). If you want a fun, quick Normal sword that's actually practical, go for the Cutter and make a DVS.

Polaris is overused, and for good reason. Go for it.

So you want to use one sword and one gun? That's your crucial decision --- it's your "character class", basically.

Instead of considering two normal weapons, consider a mix of two non-normal damage types. You can still fight anywhere in the dungeon with these. The advantage is that you'll do heavier damage to 4/6 of monsters. The disadvantage is that you'll be forced to use your sword on some monsters and your gun on other monsters. See here for more detail.

There is no reason to use

There is no reason to use spur over calibur except for it's AWESOME model, which is a shame. They even removed spur's cool ability to propel you forward on the first strike
