Say I crafted myself a blaster with a Very High Damage Vs. Gremlins and I used it so it's bound to me. If I go to upgrade to a Super Blaster will that ability carry over to my super blaster?

Yes, the Unique Variant ("UV" for short) will carry over into any upgrades you make. My Grey Owlite shield still has the same piercing resist UV it had back when it was just in its 2* form.
