I understand that a shield's defenses are only active when the player's guard is up. But what about the status defenses? I've never been frozen or lit on fire when my shield is active, so why do I need freeze or fire resistance on my shield?

Basically, freeze resistance in a shield works about the same as piercing resistance

When defending with a shield, most damage will hit your shield first (with the exception of status condition damage such as being on fire). Your shield defenses will dull the attack, and then damage is applied to your shield's health. Any status conditions in the attack will also damage your shield's health, but being resistant to a status condition will either reduce or completely eliminate any damage from that condition. On the flip side, if a shield is vulnerable to a status condition, it could be taking more damage than normal when hit by an attack causing the condition.
In case of freeze: a Skelly Shield has the chance to receive reduced or no damage from any attack that is able to inflict freeze, even if its "damage base" is elemental or piercing (which the Skelly Shield mitigates worse compared to shields with elemental/piercing defense since it doesn't have those).
Freeze resistance on a shield means that if you get hit by an attack that could have frozen you, your shield takes less damage. That is, it takes more hits to break your shield. Basically, freeze resistance in a shield works about the same as piercing resistance, in meaning that particular types of attacks do less damage to the shield.
