The game should be able to run any resolution your monitor setup is capable of running. But there may be some limitations with extended desktops, where each monitor is a distinct desktop rather then being combined into 1 long screen.
I'm not sure there is a hard limit on the maximum resolution. I've seen screenshots were people forced the game to run across three monitors just to see what would happen.
