Pick up a piercing sword, and go with an Argent unless you really want a gun for jellies/gremlins. Use the piercing sword on gremlins, wolvers, and fiends, use the avenger on everything else. A elemental gun will serve you slightly better for turrets and the main endgame content is FSC which elemental is more useful for.
UV's don't matter, and don't worry about them unless you have money to blow. I had an elevator pass and got lucky to craft some really nice ones with my mist, and now that I'm at the end of the game I sometimes roll equipment, but you can get by perfectly fine with no UVs at all.
you might have a problem with slimes/beasts , so dont pick those stratums unless you know how to pwn those enemies easily.

Your armor is going to be normal+elemental+shadow+shadow. For my first set I'd go for more normal and less shadow, but this is not bad. You're going to have great status protections, except no fire protection. Grey Owlite is of course great.
You're going to have elemental gun, elemental gun, and shadow sword. You can use double elemental in FSC; otherwise, you'll be using elemental and shadow almost everywhere. You don't have any piercing weapons. Beasts used to be tough, but nowadays the AI is so weak that you don't need piercing to handle them; shadow will work. Fiends are still really tough, so it would be nice to have a piercing weapon for them. Yes, your armor is giving you a big fiend bonus, so your elemental weapons will not be bad against them, but you should still consider a piercing weapon.
I don't dee why Antigus can't have a third branch off. Maybe i'll get a snarble bard (since i have Frumious Fangs to spend). I do tend to die countless times in RJP so I guess that'll be good.
If i were you, I would upgrade Seraphic to Fallen. Yes, the Fiend penalty hurts a bit, but not as much as having no fire defense when you are going to be farming FSC 24/7. Also, the ASI Low from Fallen would help with your DA, cause without much ASI, DA is bad.
Miracle Clock can be turned into any of the 3 final forms, although I would personally go for Chaos due to recent buffs to it. All 3 are great, but if you do turn it into Divine Cloak, you will lack much normal defense, and it will hurt you badly when encountering normal dmg in T3 (Trojans, Gremlins, and Vana)
Weapons look good. Might want to consider getting a Elite Quickstrike Module for your DA and Acheron. DA really need Med+ ASI to be good. As the other have said, get a piercing weapon. I was shying away from piercing weapon too at first, but then I learned to shield cancel the first strike, and its great.
If you got excess Fangs, get a snarb barb and a buckler. You'l eventually want all the snarby items, but those 2 are really good early on.
Overall, i would give it 7.5/10, based on your desired way of upgrading.
Well Valkyrie was not a locked decision for me. I'm still kinda hanging on Fallen, Val, or Heaven. First I though heaven would be a good pair for Gran Fausts charge. But now I have to decide what to get. Fire or Curse. I think both Fallen and Heaven have shadow def.
By the way I never got whats the deal with shields with stuff elemental vs. normal def. Someone explain. I always thought elemental was normal def on shields. When I block I dont see a difference.
You mean Heavenly Iron Armor/Helm? I hope you know that it can be crafted only in the Shadow Lairs.
To learn about shields, read the wiki articles "Shield" and "Shieldbearer Guide". Basically, when you activate your shield, it blocks all damage and status from you, until it breaks. Once it's broken, it blocks no damage or status from you. The time that it takes to break is determined by its health and its damage/status resistances. Basically, the shield's damage/status resistances are the shield's armor.
Your Antigua is going to turn into Argent or Sentenza. If Argent, then your weapons are all elemental, which means that you're really weak against gremlins and beasts (and not great against slimes and fiends, either). If Sentenza, then you have two non-normal damage types, which is good; however, an elemental gun might be preferable, as guns are useful against turrets and all turrets are vulnerable or neutral to elemental.
Your other stuff looks decent, although you might want to tell us which 5-star versions you're going for.
