when a knight picks aan item up like mats or just regular wepons sometimes another knight gets it this happend to me numerous time why cant the item go to the person that picked it up :( not fair is what i think

Go solo if you want to be stingy with materials.
Even if you could just buy them. Higher rank materials are usually only a few thousand crowns.
There is solo. If you pick up all the materials, and the other person tries to pick it up, but you get it first, it is unfair. Everybody gets it randomly.
Nothing would stop a [insult goes here] player from purposedly run ahead and grab everything.

Why do you own it if you picked it up? You didn't necessarily contribute to killing the monster. Having all resources are shared evenly throughout the party is the most fair.

I wouldn't want a Material-leech picking up my drops. I get annoyed enough with Consumables.
