I don't know where to put this, but I feel like for some reason that UV rates on alchemizations have since declined from the olden days of several months ago.

Me and all my brothers and associated alts (5 accounts) have each been quite active lately and so far, out of the at least 15 or so alchemizations we have done, we only have received one vs. Undead low UV. I'm of course compared to before my hiatus when one in every six alchemizations had a UV.

I was wondering perhaps if this is just my unbelievable luck, a hidden update perhaps, or if this issue has been covered before (sorry if it has, but the search button takes literally two minutes to load results).

I have not noticed any change in the rate of UVs. You can search the forums and wiki, to get a better idea of the UV rate. For example, here are some data:
