I know you can do that, but it seems that only mac users can do these icons in game chat/text. For some reason i'm unable to do my symbols while in game, but i'm completely able to do them outside of Spiral Knights.

Your classic ಠ_ಠ works via copy paste. For those who don't know, SK's chat supports ctrl+c for copy, and ctrl+v for paste. You can hold control plus v to paste something from your computer's clipboard system.
On a mac I can go fi‹Ï˝›Á„‰fiˇ´¨Á¨˜˙ˆ¨˜¬¥††®®ß∑∂™œ†¢´†... But that's not ASCII or whatever. You know how, when you press shift, you make a capital letter instead of lowercase? On a mac, when you hold alt you get a symbol. And when you hold shift+alt, you get another symbol. For example:
pressing "a": a
pressing shift+a: "A"
pressing alt+a: "å"
pressing alt+shift+a: "Å"
And then you can get more crazy stuff too. ex = alt+shift+k, ∆ = alt+j, √ = alt+v...
