What sort of playing styles are the Skolver, Vog Cub and Snarbolax armor sets suited for? Also, is the Snarbolax armor set worth getting?

If you mean using a full set of one type or another, without mixing sets or using trinkets, Skolver and Snarbolax have sword damage bonuses while Vog has ASI sword bonus. Damage helps on any sword, ASI helps especially on slow swords like the Divine Avenger, WRH, etc. Vog is pretty useful for Vanaduke, and Skolver for RJP runs with their defense types.
Vog cub in general is good for playing it safe. Faster swords means you can get in quick jabs and retreat from danger more easily. You prioritize damage bonus over attack speed when you're comfortable in timing your attacks and seeing through enemy patterns.
I agree with the other posters here. I cover these armors in the Armor section of my detailed sword guide — which protections tend to be valuable, Zeddy's point that ASI helps defense, how damage bonus helps your UV strategy, etc. The only other responses I'd have to your specific question are:
Based on your weapons and personal style, do you tend to use regular attacks or charge attacks? Damage bonus benefits both (sometimes), while ASI mainly benefits regular attacks.
Like many players, do you find greavers, devilites, and cats to be among the most difficult enemies in the game? Then Snarbolax is definitely valuable.
It's worth noting that universal sword damage is more valuable than universal sword ASI. (In the long term.)
This is because you can always get Sword ASI UVs but you cannot get Sword DMG UVs that apply to all monsters (and PVP).
However, you can offset this with Sword DMG Trinkets. But I wouldn't advise it--it's almost always better to wear 6 HP pendants if you can nab the missing stats in the form of UVs.
In the end, though, it doesn't matter too much and you can get whichever you like (mix and match and so on) and you can do just fine.
Damage stats generally max out with 3 mediums.
For example one elite quick strike trinket(ASI Medium) with Vog Cub(ASI Medium Each) will max out your ASI while with Skolver (Sword Damage Medium each) would cap sword damage with a Barbarous Thorn Shield (Sword Damage Medium).
Now although Vog Cub is the only set which can cap Sword ASI without resorting to UVs, Swiftstrike, or pets it is irrelevant because in the end the set with the proper resistance is better suited for the given task. As awesome as having maxed out ASI might be I am not going to start fighting fiends without my trusty Snarbolax set (though I might still fight zombies with a vog cub because zombies are just ez mode but that is beside the point >.>).
Once a pet is in its level 90's player should have access to buffs which can increase stats by medium meaning that either of these sets could potentially max both ASI and Damage.
It's not as much about playing style as bringing the correct defences/resistances for what you will be facing.
