How many toothpick shots can the set take as well as gran Faust / Acheron ?

Double piercing max (should) let you tank 1 more hit, assuming they only use toothpick. Double shadow max would reduce like 2-5 damage, so it's basically useless. Normal max would be better.

Yeah, it's unfortunate...
In fact, there's a thread in the Coliseum that covers how getting defense on armors that do not naturally have it, such as your double shadow max Skolver set, will not grant you any more defense against a weapon than a Skolver set without those UVs. So, in theory, it's...useless, at least against swords.
However, I wouldn't fret too much. After all, maybe in the future defense will be rebalanced to actually do something in Lockdown. Maybe. But hey, maybe it'll save you from a few Sentenza/Obsidian Carbine shots, so that's a thing.

Acheron and GF are the same, as the Shadow Max does nothing WHAT. SO. EVER. against enemy weapons, since Skolver is Piercing and all players have a natural 100 points of resistance towards all damage types. A derp.
I don't know about toothpick ones though.
