Believe me, knights would spend big bucks for the ability to "speak" special word balloons, perhaps with not only custom words, but also with custom shapes and colors. You're missing out on a huge money-making market, Three Rings.

As a person who tried out Runescape and disliked it, I can second Klipik that the ungodly thermonuclear explosion of rainbows and moving text should be at least toggleable.

You speak truth, sir. Unfortunately... since the entire point of those baloons would be to show off in front of other players, making it toggleable would defeat the entire idea, wouldn't it? ;)
As much as it sounds like a good idea money-wise, I would only like it if there was an option to turn off being able to see them. I like the simple chat, wouldn't want haven to be filled with rainbow-colored balloons made of candy floss and hellfire.
