Was playing on my alt, had a friend shoot a box behind a gate, and saw the coin and got super confused.
As far as I can tell, they're a rarity that don't tell you that you picked them up, they're unbound, they can be sold to vendors for 100 crowns each, and drop from all slime monsters and boxes (only ones I saw them drop from were in slime themed levels).
Odd that we had the update on Wednesday but they didn't start showing up until today. If we had a thing snuck in I'm gonna be a mixture of ecstatic and dreadful. Ecstatic because omg, new stuff! Dreadful because farming is my middle name, but farming slimes isn't quite the game I'm looking forwards to. The squishy buggers have it out for me.

I found one in T2 aurora isles jelly farm. but the thing is, I got it from a bush (or shrub, or however you want to call it, I mean the small plants you can walk over). so honestly, I think just anything that can drop gold coins can drop slime coins.

Excitement!!!
I'm pretty excited to see new updates. This one is not finished yet because the chat does not inform you that you have collected a slime coin and the casino doesn't seem to appear in the clockworks (according to the posts in this thread). So it just seems to be a bug. It's still nice though. There might also be multiple types of slime coins, because the only one we've seen so far (again, according to this thread) is the golden one. I imagine there would also be bronze and silver versions that would give you worse rewards in the casino than the golden one would.

The tokens are dropping alongside golden 50-crown coins, so that the textures overlap. Definitely dropping from treasure boxes, as well as mobs.

Slimes resist piercing damage, so we probably should not do that particular method. I would more preferably stick to the designated edged shovel.

I didn't realize I wanted this until it was mentioned.
It was more of a mistake than a secret update, it was probably something they weren't going to release yet since they patched it out afterwards.
