I changed my button for auto
I changed my button for auto aim to caps lock so I can switch it off and not have to hold down the key.

Auto-Aim
I personally use Auto-aim enough to keep it on. My controls are all weird, but as of now I can turn Auto-aim off by holding Right Click. It was a bit awkward at first, but now I've gotten used to pressing right and left click when trying to fire a tricky shot (Most of the time this is when I'm using an Alchemer or trying to throw water at Vana w/o breaking freeze).

Auto aim is good for fiends
Auto aim is good for fiends and wolvers, when you feel the need to land an entire combo on them.

Controls
Scroll all the way to the bottom
The only checkbox down there
Or, you can hold the left shift to toggle it, assuming you havn't customized your controls and changed that key. Hold to turn it off/on depending on the checkbox I mentioned above.
