So as the tittle says what level of freeze resistance do you need (low, ultra med etc) to resist enough of the freeze so that you can thaw out before the silversap (freeze lumber) can attack again
additional question: would a snarbolax coat with a freeze low be enough to thaw you from the freeze before a lumber can attack you again

Depends on the difficulty, on Elite I believe it may be impossible, but if you had enough freeze resistance to resist moderate freeze (that is, 9 resistance or above), then the timer may be low enough for you to thaw before the next attack, but I highly doubt it (would need to test).
Freeze low Snarbolax Coat alone gives +4 resistance, which is definitely not enough to thaw before it attacks again.
