I keep getting random guild invites, and I am not sure if it's wise just to accept random guild invites from people you don't know or never talk to. I seem try to start conversations with people, but they just ignore(not block) me. Should I accept the guild invites in order to try and make friends that way or keep trying to start conversations?

Yes, people will randomly invite you into guilds. There are two good ways to deal with them:
A. Politely decline.
B. Accept, just to see what the guild is like, but without committing to stay in the guild for an extended period.

Do you mean that they invite you and then don't want to talk to you? Then you definitely don't want that guild.
Or are you talking about your general process of getting to know people, who have not invited you into a guild? Try not starting random conversations in Haven. Instead, try to talk to people in parties. Start by saying "hi" at the start of the run, and maybe "good job" after a danger room or other tough spot. If the other player responds, then you can talk some more. If he doesn't, then he's not much use as a friend.
I seem to have averaged 1-2 guild invites per day since I began SK 3 months ago. I've ignored them, since I don't know any of the people inviting, and the only things the guilds seem to want are warm bodies to pour money into the guild coffers. According to the wiki, there don't seem to be any benefits of belonging to a guild anyway.
On the other hand, I've also pretty much given up random crewing in this game. I've tried saying "hi" in the few non-solo random crews I've played. Sometimes they say "hi" back, more often they don't, but either way they just race off and leave me struggling to keep up. Tactics? Avoid damage? Actually spend time talking and building friendships? I must be in the wrong crews.
(Yes, that leaves crews with my sons and their friends, and solo runs. Well, the former was what brought me into SK.)
Have I been doing this wrong? Maybe random crews are just that bad, and guild crews are better? Are there really some fun guilds? How could I know which ones are worth my time, without wasting my time with cruddy ones? (No, my kids aren't in any guilds either.)

I find random parties kind of fun, because they are so unpredictable. But they are not for everyone.
Guilds have no large uses, but several small uses. A guild is basically an extended friend list with a group chat feature. These "friends" all know each other, so you can depend on them to equip and play in certain ways, which builds teamwork. A guild allows you to play guild PvP. It allows you to contribute to the improvement of a guild hall (which has no practical purpose, but which may give you a sense of accomplishment).
If you have children, then you are probably too mature for many guilds. Try to find a guild heavy with adults. If you're into PvP, then try to find one that's heavily into PvP. If you're just learning the game, then try to find one with players of similar experience. And so on. You might check out the Guild Recruitment forum. You might also check out Category: Guilds on the wiki.
Guild halls are for show and a large place for friends to gather. However the best feature is having a close area to check the Auction House, General Goods merchant and more. While using the Haven you have to go through 2 or 3 teleport points just to get to the Auction House, General Goods Merchant, and the Coliseum Alchemy machine and other areas. That can be a pain but in a guild hall everything can be put close together with no annoying teleport points. Allowing you to do things a little faster.
As well as guilds having a definite stream of people to party with, many guilds (including mine) make use of the 'member', 'veteran' and 'officer' storage facilities. These allow people to swap and share different mats, weapons, armor etc for free; which is definitely a benefit if you're in a fix and don't have enough crowns for the AH.
Although, I'm sure this depends on each guilds individual rules on sharing/donating so it would be best to check into that before signing onto a guild :)

Many guilds have wiki pages. Search for "Category: Guilds" on the wiki.
I think that you can tell a lot from a guild's wiki page: How mature the authors are, how serious they are about presenting their guilds well, etc. You can also tell whether they are native English speakers, and make allowances for that. Many of them state their policies.
Even if the guild doesn't have a wiki page with policies, you can ask the guild officers about the guild's policies. Or you can just join the guild and wait for people to demand money from you. If they never do, and you're enjoying yourself, then stay. If they demand money, and you think that other guilds might be just as enjoyable, then leave.
Guilds are a way (if you don't have anyone on you friends list) to make friends and get advice on the game. Careful to not abuse the storage though, as many people complain about items getting stolen then report you for that item being taken (if they see you on the record guild thing)
