Imagine I have a brandish with a UV, say gremlin low. If I were to craft this up into a 3star brandish, is there a chance of me aquiring a second UV besides grem low? Or must I say"do not transfer varients" in order to have a shot at a diff variant?

You will have to delete current UV. But I really suggest you to keep it, because 1 per 1000 items crafted in that way gets new, better UV.

If we're offering advice, then here's mine:
Your Brandish is going to end up as Combuster, Voltedge, Glacius, Acheron, or Obsidian Edge. The gremlin UV is worthless on the first three. It is of very low value on the latter two. I would remove the UV when upgrading, just for the remote chance of getting a valuable UV: ASI or CTR.
In other words, the truly valuable UVs are ASI and CTR. You'll never get these UVs if you don't try. So try every chance you get --- including this one.
When I say "truly valuable", I mean both in terms of crowns if you sell it, and in terms of usefulness if you keep it.
No. If you keep your UV, then you have no chance at any other UVs. Read the "Upgrading" section of the wiki page "Crafting". Or read the wiki page "Unique Variant".
