So I have an Ash Tail Coat UV elemental med and a Wolver Coat UV pierce high/poison low and I want to make them into Snarbolax/Skolver gear, but I'm not sure which should be which. Any suggestions?

I agree that it doesn't matter for PvE. Damage UVs on armor seem to have very little effect, and your status UV is only +1. I can't comment on Lockdown however.

on full skolver, that piercing high will matter a bit, but to survive an extra max damage flourish hit, I think you will need another UV, not sure which one is needed though, also depends if your armor is fully heated or not obviously.

It's a decent UV. Skolver would let you stack the piercing defense a bit higher which is always nice, while snarbolax would raise its poison resist to a full 4 bars, allowing it to combo with poison+4 armors that also have poison low+ UVs, however the piercing resistance would be somewhat moot if you did this unless you used say, deadly virulisk/dragon scale helm with it, which is an unlikely scenario.
it only really matters in Lockdown, but the piercing high would be best on a skolver for that, elemental would go best on vog cub.
