Just as in PvE, I think there should be an option to show how much damage every hit deals.

A hitsound would be nicer, but this is OK too. Still I'm pretty sure SK doesn't want you to see just how useless that Shadow Max on that Chaos set really is.
Or just release the entire damage table/formula instead of having players gather the data themselves. I mean if we're not meant to see it, you shouldn't show damage numbers in the first place. If we are allowed to see it, surely you can upload a copy of it onto the wiki? It's got to be sitting in your database somewhere...

I'm sure they won't create lag, and there will probably be a setting to turn them off if they are annoying to the player.

I would love if they also post a damage board at the end of the match showing who did the most damage per hit and not just total damage overall. I would like to see whether my gunner set does more damage then my sword set. Like if i use rocket hammer for that whole match versus using my 5 star normal damage magnus, which one is stronger from there change attack hits.

I would agree with you but there's one problem: They probably don't have a table.
How? They probably have a fancy equation like
((Piercing Damage - Enemy Piercing Resist) + (Normal Damage - Enemy Normal Resist))*Level Modifier
and then they just feed in numbers. Of course, in that case they could provide those damage/resist numbers.
HOWEVER, they keep numbers hidden for a reason: They want to lure that kind of player in. The kind of player who researches and studies. These players tend to be more methodical and nicer people. (Okay, just made that up, but I'm probably not too far from the truth.) Basically, they're appealing to a small group of players and possibly keeping them in the game.
AKA this is another type of meta: Research.
That being said, the OP doesn't go against the idea of research at all. I give my support.
Would make damage calculations a bit easier for sure.
