You normally want to care about the latency to the server closest to your location. However, the new hit mechanics means if you are fighting someone on a different server, your packet has to reach their server to register.
There are two caveats:
1. I don't think SK runs on all the listed servers. There's probably different pricing for different number of servers used, and OOO/Grey Havens isn't rich.
2. Remember the given latency is round trip. Normally this means half of it is upload and have of it is download. However, there can be a discrepancy. A 300 ms latency could mean 100 ms upload and 200 ms download.
Also a PSA:
No amount of skill can compensate for upload latency, but good prediction can mitigate effects of download latency. If you suddenly find yourself playing badly one day, it could very well be your latency changed. No need to rage at people or at yourself. Just find something else to do and try again some other time.
It recently occurred to me that Lockdown culture has gotten better over the years. There are still some salty players, but I think most people are in it for the fun. :D
