Sometimes tier bosses seem easy to beat, and sometimes nearly impossible, and other times they good down after a good fight. Thus, i believe that have at least three different difficulty settings. It's definitely not the same every time! What do you think is causing the disparity in difficulty?

Speaking as a T1 player, there's a definite difference when you run a dungeon solo vs group of 4 - the difference in enemy hits and HP is evident from the small mobs all the way through to the main bosses. Sometimes solo'ing is actually easier than in a group, depending on the dungeon.
Boss HP, like all enemies, is based on party size. The difficulty of a boss (other then Snarby, who's always easy) is also related to WHO your party members are and what vials/pills you picked up to take to the boss. PUGs, unless you amazingly get a good one, almost always make them harder then a well organized group of friends/guild mates.
The difference is in the group, not the boss. A group of 4 where half decide to hide in the corners during JK is going to be a LOT harder then a group that all swarm on JK and beat his jiggly butt to a pulp as fast as possible.

There's a huge difference between a group with 2-3 players who know what they're doing and a group with 2-3 players who are clueless. I've done JK runs where he died in roughly 15 seconds; I've also done JK runs where I was literally the only person hitting him because the other players just ran around hiding in corners.
JK is really the perfect fight to determine how good a player is. Newbies and bad players tend to run around and do nothing because they're intimidated by the sheer number of jellies. Good players will charge in and take him down while shield bumping slimes and blocking most of the damage.
Are you playing the bosses with the same amount of players each time? With more players, bosses will have more health...
If you are playing with the same amount of players, it is likely that sometimes you get good teammates and sometimes you don't. Luck of the draw I guess.
