In general, does one keep trying to get a UV version of their desired equipment no matter how long it takes or is it often better to just take what you get and just keep going with that? It's been a rather long haul getting the necessary materials for my Brandish and Wolver Coat recipes, so it's something I'm curious about.

Generally speaking, for your first set of equipment you don't have the resources required to farm for UVs. It often takes thousands of crowns and CE to craft a UV that is actually useful.
If you really want UVs on your first set of gear, it's often better to buy a medium level UV from the AH. Mass crafters don't value these items very highly and it will be cheaper than crafting on your own and hoping for something good.
If you have the resources to spare, go for it, otherwise just take what you need.
