Traevelliath's insight is great.
The real question is: Where are those monsters getting their money? Unfortunately, following this question to its logical conclusion has led me to a perma-death game in which hardly anyone ever finds any treasure. Like real life.

I think they get the money from the same place that RPG enemies get their loot drops, that Mario enemies get their coins, that Zelda enemies get their rupees, that Metroid enemies get freaking missiles etc.
If I had to guess, it's to fight hyperinflation.
MMO economics are a bit weird in that, every time you kill a monster or buy Energy, you essentially print money. Print enough money and your money becomes worthless, causing players to start looking at other things for currency (see Stones of Jordan from Diablo II). Thus, developers need to implement mechanics that drain huge amounts of money out the economy, else the economy crashes. Auction House fees, UV rolling, Unbinding, Featured Auctions, and the Supply Depot are all ways to do this.
A more cynical person would say "It's because WoW did it"
