I notice armor shows how much it defends you from in light blue bars (which are super vague, but that's why I'm here).
If a piece of armor had a Normal bar that went all the way to the end, does that mean your defense against Normal-type attacks can't go any higher?
The reason I ask is that if my defense in something was almost maxed, it would make more sense to get a piece of armor that defends from an entirely different type of attack.
Also, shields seem to have high status ailment resistances, I don't get status ailments often but is that a passive resistance or only while blocking or what?

First off - the blue bar for the defense value of a particular item and the blue bar for your total defense (when value shown when mousing over the "helmet" icon at the bottom of the "character" box) do not use the same scale - if an item has a max blue bar, then with it equipped and no other item giving defense against that particular damage type, the blue bar in the "character" box will only be at 1/2. Net result - with no UV's modifying the values, you'd need both a helmet and armor that have a max blue bar to get the total to maximum.
I've never tested this (don't have equipment that can do this), but I suspect that even if you did max out your defense against one particular type, it wouldn't completely eliminate all damage from that type, just reduce it to a "minimum possible damage" value for each hit taken.
I've read a number of people asserting that the status resists apply even when you aren't actively shielding, but I'm not too sure about this. If true, even though a shield has max status resist, you aren't completely protected against that status (I use an Owlite series shield, which has max Shock resist, but I still get shocked). Other than possibly the status resist and the various "boost" abilities, a shield has no effect unless you are actively defending.
