I just recently crafted a Nightblade that does shadow and normal damage. However, it has a UV that does low or medium damage againts undead. And undead monsters are resistant to shadow damage. Will the UV cancle that out?

Nope

Nope, damage to undead will still be terrible.

To put it into perspective,

To put it into perspective, if you upgraded the sword all the way to Acheron and brought it down to Depth 24 you'd do approximately 134 damage per hit to Undead, whereas Fiends get the usual 128 damage. Compare that to using a Combuster at the same depth against Undead with no UV, which does 270 per hit.
