Do the price change if you sell more items or it stays the same? For example if you sell item X for 50 crowns, it will forever stay at 50 crowns.

No, the price that the NPCs offer you will never decrease for the same item. As far as I know, the price is entirely dependent on the star level of the item being sold (300 for a 1 star, 30,000 for a 5 star).
If you sell two items for 50.. you get 100..
