First off, I crafted a super blaster that came with a bonus dmg vs gremlins UV. Is this UV worth keeping, and for what reason why/why not? Also, at what point in time is it a good idea to stop keeping UVs as you level up your item? By level up, I mean crafting, not heat.

Gremlins dodge sort of halfassedly compare to wolvers or fiends, though. Often they just leap back. Also, wolvers can jump back to melee range and fiends can throw [crap] at you wherever you are, but it's sometimes nice to force gremlins backwards.
I'm assuming the gun is already bound to you, so might as well keep the UV. Since the blaster series does normal damage there are no inherently poor UVs for the series, as opposed to the same UV on an alchemer that would be rather pointless. The problem with shooting at gremlins is that it can trigger their dodge response. But if you shoot into a bunch of gremlins, you can usually hit someone.
In guns though, ASI is usually more highly prized as a UV.
Not sure I understand the last question. Once you get a UV on an item, as long as it isn't a pointless UV, you keep it all the way to 5*. If it is a poor UV then you can try rerolling, but most of the time you'll end up with no UV at all.
