Lets just says i have scolver set and thorn shield which gives me a max dmg bonus. Does a sword with UV Dmg bonus to slime/beast or watsoever stacks with the Max dmg bonus i have or does it overkill it?

Full Skolver set and Barbarous Thorn Shield will indeed give you damage bonus max with swords, which will make any damage UV redundant/unnecessary. No stacking, sadly.

All damage bonuses combine,
All damage bonuses combine, regardless of type, and max is the cap. High + Very High or higher will still equal Maximum.
