As far as item value does anybody know the average price (in crowns) for most if not all the items in the game?
Is there a website that provides such information?

Searching for the item in the
Searching for the item in the auction house, the bazaar or listening to the /trade channel.
Because different strata give different materials and some are more needed than others their prices fluctuate and any website would be inaccurate in a few days.
There are a few set prices. Recipes for example are sold by basil at fixed prices, so recipes are generally never sold for less.
The weapon and armor vendors are over priced but do set upper limits on non UV items.

unbinding prices
considering the cost to make items (1450 CE alone starting from 2 star to 5 star) 4000 CE to unbind one 5 star item is ridiculous, but then again, so has the economy and "balance" the game's no good for a casual player. the hardcore player will spend hundreds to get all 5 star gear with 3 uv's each, who know how long for 3 MAX uv items. i'd rather spend 100$ to cut the elevator costs completely and have a set CE price of 2700 CR

Also saying that what could be really expensive one day could be really cheap the next. In the AH, I've been selling brandishes for about 5k each recently and just a week ago, they were going for less than 2k while my Flourish sell prices reversed. (This is JUST ME, btw.)

Yep. I spent a month selling autoguns at 5K per and for the last week they've suddenly dropped to 2.5K.
Nope. It's a player-run economy therefore prices will inevitably fluctuate on whimsy.
