So guys, is it ever good to combine Armor sets? For example, you use Divine Veil together with Skolver Coat so you have all 4 damage resist. I know that if you do that, you won't be extremely strong against a specific type of damage but does having resistance against all damage type compensate? You also won't have to craft loads of different armors and helmets for each strata.

I would say it's better if you can have a full set for the given stratum, however that's often not possible so mixing and matching is not bad, it can also allow to handle mixed strata more easily.
Many people get full sets because of the bonuses some sets give. For example, many sword users get the full Vog set because its the only set with ASI.
^Wrong. The Fallen set has ASI low. It's still inferior to Vog's medium, though.
the Fallen set has ASI low for both guns and swords, so a complete fallen set gives you the same bonus as mixing vog an gunslinger armor. (Well, with the Fallen set, you get ASI for bombs to, but no one cares about that.) A vog and Fallen gives you both elemental and shadow defense, and a boost to your gun, all of which are useful for the FSC.
What I combined is the Divine Veil and the Radiant Silvermail. It gives me a ton of defence against shadow, elemental, and piercing, and I probably will get a 5* trinket for extra protection against elemental. Anyway, this armor combination looks nice, and gives good bonuses as well.
The very first knight I made had full Divine Set on, which was pretty terrible combined with the WHB because I had to always rush with the sword and etc. So I switched to wearing the Divine Mantle as a costume and made myself a Skolver Coat for my armor (also switched to CIV). In my opinion, it was great! I didn't die a lot, I didn't have to buy more sets of weapons and armor, and my CIV buffed up because of the set. If you plan on mixing armor sets then mix the Divine and Skolver set together. In my opinion, that's the best one to mix. But, you also have to play smart!
Many people would argue that it's OFTEN good to combine armor sets, but not for the purposes of having every dmg type covered--there are just too many enemies in tier3 that deal straight elemental, for example, and what amount your armor doesn't compensate for is going to your health. That's not saying that you need a separate set for every type of strata, just that you should focus on your dodging/shielding technique, and rely on the stacked bonuses from your equipment to complement your playing style. Also, stacking two of the same type 100-token defense trinkets can help--and after a certain point, there's nothing else to spend the tokens on anyway.
