It's been a while since my boyfriend and I have played this game (CB was the last time we really played).
When crafting new items though, are they bound once created? Or are they bound once they're first equipped?

All item are unbound until equipped.
4 and 5* items need minimum heat levels (5 and 10 respectively) on the previous tier item in order to make it, so GENERALLY, all 4 and 5* items will be bound on creation, since their precursor item was already bound.
But if you buy an unbound 4* avenger at heat level 10 in the auction house, and craft a divine avenger out of it, the DA will be unbound until it is equipped.
4* and up are bound when crafted. 3* are un-bound when crafted and they bind once you equip them.
