Now I know that gear can hold up to 3 UV's but for arguments sake lets assume that you can only get 1 max uv, which one would you want and why?

Offensive UV's can affect your playstyle and ability to pull things off safer/faster, so I'd put more preference on those than anything.
I'd say screw defense, since you should learn to be skilled enough to not get hit by dangerous things - or at least, that's how my philosophy goes.
I play FSC with either Valkyrie set, to kill trojans faster, or Fallen set, if I'm in a larger team, for general ASPD reduction. If I get hit by fire breath- whoops, my fault for not paying attention - I should get better and either hit them first or run around them. If I run into fire via screen freeze or lag, whoops, resistance won't do anything about that - I'd die anyway.
Saves you a ton of money buying worthless things, too :l.
Sometimes, I wonder if people spend a bunch of time grinding money/energy to buy/craft their max fire/shadow defense crap just to realize they don't need it anymore, since they eventually get good enough to avoid the friggin monsters.
Because the only other thing to buy would be costume armor which technically is useless when it comes to playing other then what you like, or want to show off, which you can also do with UVs so when you have extra cash to throw around, why not buy a nice UV?
Id say max shadow, if I was running Vog Cub, which the majority of people use for FSC. Max shadow because vog covers elemental and normal defense, and the main reason which is slags do normal/shadow damage, so if you had a shadow UV you could cover that weakness and take less damage from annoying slags, which take huge hunks of health in one hit.
