I've noticed the Faust has increased attack speed compared to the Grintovec, but the swing matches the Grintovec's speed. Am I missing something or do the bars speak lies?

Yep. Take other stat bars with a grain of salt too, they were drawn by hand and don't actually line up with any stats on the weapons.

Does grintovec's slash actually match the faust's attack speed?
I haven't gotten that line yet (because I'm more interested in the sudaruska), but as far as before, the attack speeds were like this
[Troika/Kamarin/Khorovod] < [Sealed Sword/Faust/Avenger lines]
Try doing the second swing and holding shield and see if the shield comes up around the same time. I might have some interest in it if it's actually like this:
[Troika/Kamarin/Khorovod/(Sudaruska?)] < [Jintovec/Grintovec/Triglav] <= [Sealed Sword/Faust/Avenger lines].
Most people aren't really familiar enough to tell the difference between attack speeds for heavy swords, but it makes a huge difference for my playstyle. Anyone wanna test it?

Well...
I haven't done a serious test where I record the amount of time between swings. I just raise my shield to see which comes up first. And well.... they come up EXACTLY by my eyes. I haven't noticed a difference in the speed whatsoever. Maybe if someone volunteered to run some tests with a Swiftstrike Buckler? That would be great :)

after a little bit of testing...
Not sure about Triglav, but Sudaruska is the same speed as the rest of the Troika line (so it's slower than avenger/gran faust)
The bars speak lies.
All of them.
(The Faust's speed bar was mistakenly copied from the Proto Sword rather than the Hatchet.)
