Is there any benefit to leveling up gear with heat before upgrading them to higher levels? I'm making a new handgun, and I could just about get it to 4 stars right away, but I'm not so sure if there is something else behind alchemy.

you only have to put in heat to get the min required level. from what i understand any heat you put into it beyond the min requirements does not add anything to the higher level versions.
so you wont be able to get straight to 4 stars on materials alone, youll need to put in some heat at one of the stages (i think going from 3stra to 4star usually requires the 3star version to be lvl 5 or above)
