So i have a pair of mech'tennas and so if for example, set it on my demo helmet, if i upgrade it up to a fused demo, will it be deleted?

It depends--check whether the fused demo has a slot for helmet side accessories. I believe I read that it is supposed to warn you (or will in the near future if it hasn't been implemented already) if crafting up a piece of equipment will eliminate an accessory due to not having a spot for it.

Accessories will be conserved
Accessories will be conserved through upgrades as long as they are compatible. I am not clear what would happen if you had say an accessory that worked for the 3* and 5*, but not the 4* though...
In your case it should be fine though as the Demo, Fused Demo, Heavy Demo, and Volcanic Demo are the same model, just different colors (Mad is same too, but with a mohawk stuck on).
