If you make the rock jelly into a crown, odds are you'll probably lose any helmet top accessories, possibly a bunch of other ones as well if the crown doesn't have the slots for them. Check the wiki to see if someone has updated the page on the jelly crown, or try to find someone in-game wearing the crown and inspect them. Your recipe (hit F5) should also indicate what accessory slots the jelly crown has.
