I can't seem to find a wiki page to find out how many maximum uvs you can add together for status like elemental, shadow, fire, freeze, and so forth. Is there a wiki or topic where someone found out the total maximum number of units you could get for each status types in number terms? Thank you.

You can get 3 UV's per an item, all UV's can stack, but a stack can only go to 6. Low = 1 medium = 2 high = 3 very high = 4 ultra = 5 max = 6
Let's say you got Vog Cub set. This gets you a very high, or 4, on ASI. If you use a trinket or a sword UV to stack that even higher, it will stop at maximum, 6, even if it would add up to 7.
This stacking does not apply to all UV's present, only ones of the same type. So you can have your max on ASI, and a trinket or other UV to give you a high on elemental defense.
Ah yes, I understand the maximum is the highest level you can get for each status type. So let's say we have an elemental maximum for skolver coat, and another elemental maximum for the skolver cap. Only one of them would count, and the other maximum uv will be cancelled right? Well, I'm also confused on how the unit bars keep adding up when you view your gear on the bottom icons of your player profile box when you inspect yourself. I'm not sure how to explain it. I guess I have to snapshot it, so I'll shot it later.
2x elemental maximums UV on a coat & cap will add together. You will be able to see this on your character window.
No max is currently known when it comes to armor and status resistance (unlike weapon bonuses, which are not tracked by bars). A defense can go beyond the maximum of a bar. (For instance, normal max on an ancient plate shield will still reduce damage, the question is how much.)
The player profile armor bars are (armor + helm) / 2, if that's what you noticed as "confusing".
Actually max+max defensive uvs are untested or similar. This question pops every once in a while and nobody has either the UVs, the willingness, or a proper method to test it.
Also, OP, i think your question was too confusing as everyone here has answered a question you never asked: "What is the maximum number of UV's allowed for a single item?"
What I think you mean to ask is: "How many maximum UV's of a certain defense or status resistance (elemental, shadow, curse, fire, etc.) can you have before they have no value?"
Ah thanks, I hope the UVs would add a lot to protection in the dungeons especially. Well I notice that the health adds up when you view the bottom profile, and everything else, along with the highest level of uv you've attained when all the gear defenses/offenses are added up. But for armor I guess that is the average between armor and helmet. Thanks.
And I guess you can have 3 maximum uvs for weapons if you add in trinkets and armor right?

It appears you have confused UV's, which are attached to specific items and bonuses, which can be added to an item when equipped in conjunction with a bonus giving equipment.
Weapons can have an all the bonuses on them at the same time.
You can have asi, ctr and +dmg, as well as +dmg to fiends, beasts, constructs, slime, gremlins, undead all affect a single weapon at the same time. The sources of these bonuses can come from shields (barbarous thorn shield, swift striker buckler), trinkets, helmets and armors (deadshot, valkyrie etc..) A weapon's UV(s) are also a source of bonuses.
Trinkets, shield, helm and armor bonuses on weapons do not add a UV to the weapon. Instead they are bonuses that are added at the player / weapon profile at the bottom. Unless that bonus is max'd on the weapon profile (explained above) then the bonus will be added.
For instance, if you have a +damage sword med trinket, all your swords will get +dmg med on the weapon profile. If one sword has a UV for +dmg med to beasts, the weapon profile will show +dmg vhigh to beasts since it will add together the trinket bonus (med) as well as the UV bonus (med.)

It's more than possible to have up to three UVs that give out a Max boost to your stuff. Just insanely rare though.
