For just a second, let's say that the Snarby doesn't have that poison resist.
I have a Ash Tail Cap Elemental High. I'm debating whether to make it a Skolver or Snarby item. (I do have Shadow Keys)
I'm going to use this both in PvP and the Clockworks. (But mainly PvP) I already have a Skolver Cap Shadow High.
IMO, I'm leaning towards Snarby just because I already miss my 1st [Snarby] set. I'm also leanin toward it because I'd THINK this wouldn't be a bad combo in PvP:
Snarby Cap Ele High
Snarby Coat Ele High/MAXIMUM
Royal Jelly Band x2
As opposed to my current PvP set(s)
Skolver Set (Various UVs)
Various Trinkets
And
Skolver Cap+Vog Cub Coat (Various UVs)
Various Trinkets

So Snarby>Skolver right?
For balance reasons, defense does not reduce damage in PvP. I have personally tested this, and I took the same amount of damage from a Polaris bullet in both Proto gear and Vog Cub. This should still hold true so long there has not been a recent stealth patch related to the issue. Status resists on armor do still apply however. Due to the fact that freeze is much more common in PvP than poison, Skolver>Snarby, unless the Snarby has freeze resist UVs that would push it near the resist cap.
