I already have all I need from his tokens. Is it profitable (worth the 10 energy) to go down for the tokens to sell the rewards or should I just do levels and not do the boss?

Let's say that you sell the SS or Antigua for 45k. 600CE for unbinding is 36k, give or take. You have a profit of 9k, which is about 150CE. It takes ~7 runs to get all the Jelly Gems--so yes, profitable by a small margin if you sell your item for that much. If you can't sell for that much, if the price of CE goes up, or if you need to energy revive, then that margin pretty much disappears.
Long story short--at this point, it's not really worth it, but you'd at least break even if you do kill JK.

but the answer is to buy the 3* armors with the tokens and then vendor them
15 tokens to get the armors, they vendor for 3500cr i think it was?
so each 3 tokens is 700 cr (assumed you gone through the whole run)
if you don't revive, then you get 700cr + what ever you get in the stage.
or.. as others have pointed out, you can use 2 tokens for rock salt , and put it on the AH.
which is a little more profit, for a little more risk.
JK is pretty easy to kill.
So, YES, it is worth it (profitable) to kill JK.
How much do you get from selling the armour to vendors? Would that be profitable? No CE needed for that and the price is definite, I just need to know how much you would actually make from it assuming I get 3 tokens each time.

If you sell a jelly mail piece to an NPC you'll get ~233cr per jelly gem. So for every 3 Jelly Gems (we'll assume you join before basil) you get 700 crowns, plus whatever loot drops from the dead cubes, polyps and the party boxes.
Worth it, so long as you don't use a revive.
If I were you I will not rely on vendor.
You say 15 token for a fix vendor return prize of 3500 and you claims it's 700cr for 3 tokens (presumably 3, if you do all the Jelly Palace levels).
Some thing is seriously missing here: the 10 energy cost to go down to fight Jelly King which is equivalent to 630 cr at the moment, minus that and you have 70cr net for fighting JK, AND WIN! Saying that you do not have to energy-revive. That is less likely now because JK seems to be nerfed in last patch and being softer.
Whatever you get in the fight...a few more cr, a little more heat. I rarely see any good mat dropped there, let alone equipment.
So I agree with Myllakka's analysis: yes small margin profit but will disappear easily if a) energy revive b) ce price goes up c) you cant sell the item for over 45k cr and d) YOU LOSE TO JK.
The only thing that keeps me at killing JK today (Im still doing it) is the FUN in seeing him liquefied.
And the chance of getting some nice UV when you exchange a sealed sword. Speaking lottery.
