So i want to have a piercing weapon in my arsenal to have that edge against pierce weak enemies...but im not really sure which one is better, the Flourish line, or the Snarby line... And if the flourish which of the 3 would be the best..?

Snarble's barb may does less
Snarble's barb's charged attack may does less damage than Flourish (since it's spreaded out), but it has its uses. For example you can use it to hit devilites hiding in a big crowd in the last wave of arena round 3.

Thats good enouph for me.
Normal flourish = snarble barb in terms of damage.
The only difference is the charge, there are plenty of other topics that cover those issues.
Elemental flourishes are weaker, the status effect is not so worthy.
