So if I tick Transfer UV while crafting I won't be able to get another UV?
I saw items in the AH with multiple UVs (2-3). Is that from paying Punch to add UV?

it's always cheaper to just re-craft the same 2* equipment and sell the spares until you get a fairly good UV. Just don't hold out for anything Ultra.
There is a very, very rare chance of getting more than one UV through crafting, but it's possible. And yes, once you have a UV you cannot get another one unless you un-tick the box and lose the first one. The same goes for Punch. You cannot buy one UV at one point and another at another point and have two UVs; the first one would be replaced by the second one.
