has anyone ever wondered what the Knights truly look like? We've only seen them in full battle suit, and never in any civilian clothes, or anything. even their faces are shrouded by their headgear, no matter what they wear. So, I think its a perfect point of argume-er... discussion.

well I brought it up
because yea, I always wondered what they looked like without the armor, and because total war is hard. Mobilizing an entire population to fight is a daunting task, and so I interpreted as the Skylark as not only a mothership, but as a warship. A forward base for the military aspect of the spiral community.
Also, i interpret knight as the midevil knight, its a title, but they don't wear the armor like a skin.
I always thought they looked a bit like humans, just a more metalic complection, with blue wires showing through that mist energy runs through, and then the glowing eyes, but I really wanted to start seeing if anyone had different thoughts.

Looking very closely at the knight's in-game models, they appear to have noses. You can even see it somewhat in that Shadow Key deal image with that knight holding the Shadow Key. Other than that, there is not much that can be said of them. We can also assume they have mouths, seeing as there are frequent references to them eating, or descriptions of items being tasty, etc. (Rocky Core, Jelly Gems, Rock Salt, Brute Jelly Shield, Rocky Jelly Shield, Warp Dust, etc.)
I think that they are cyborgs or some sort, or at least are partially mechanical.
Their armour IS their civilian clothes!
Do you think they call themselves KNIGHTS for FUN!?
I think they look like texture-less smooth shadow-shapes resembling a humanoid body.
It's one of those questions that the universe cannot allow to be answered, like 'Doctor Who?'
