I've been playing for a few hours, and it's starting to seem like players don't evolve into separate classes even later in the game. So, is there any real reason to create more than one character?

You're right; basically the entire combat dynamic in the game was laid out for you upfront when you were starting. There's no "class." The thing that makes one knight different from the other are gear choices. A swordsman/bomber plays quite differently from a gunslinger, and so on.
There is no class system in the game. We're all spiral knights.
